Waldorf at Home: Thunder Cake

Next time you see a thunderstorm in the forecast, consider gathering a few tomatoes from your garden with your little one and whipping up this tasty treat to enjoy while watching the storm!

SUPPLIES
Whisk
Measuring cup
Measuring spoons
2 round cake pans: 8 1/2 inch (or square)

INGREDIENTS
1 c room temperature butter
1 3/4 c sugar
1 tsp vanilla extract
3 eggs, separated
1 c cold water
1/3 c pureed tomatoes
2 1/2 c cake or all-purpose flour
1/2 c cocoa powder
1 1/2 tsp baking soda
1 tsp salt
Your favorite frosting ingredients
Strawberries

Preheat the oven to 350 F. Grease and flour the cake pans.

Cream together the butter, sugar, and vanilla. Blend in egg yolks. Beat egg whites until they are stiff and fold in. Add water and tomatoes and mix.

Sift together the flour, cocoa powder, baking soda, and salt.

Mix the dry mixture into the creamy mixture. Bake for 35-40 minutes, or until a knife comes out clean from the center of the cake. Frost between the layers and on top with your favorite frosting. Decorate with strawberries if you have them.
